Haikus are just groups
Of well-arrang'd syllables
Sign language has none.
TL;DR signs don't have syllables, because they're gestures, not sounds.

That is true, but could it not be argued that certain gestures or parts thereof make up the sign language equivalent of syllables, and could therefore form an equivalent version of a haiku?

Signed languages do have like, sub-word elements (hand placement, direction, shape, eye gaze, body positioning...), but lots of them go on at the same time. Sign's not linear the way speech is so dividing it into syllables... doesn't rly make sense.

That is true, although in Auslan there's a list of basic handshapes that pretty much most signs can be placed under, so I feel you could use those as syllables.
